Today we are going to make something special and different. We are going to make a breakfast which will lift your mood. Pancakes and waffles would do the trick anytime at our house and you children will love it. I tried to use healthy ingredients for example- whole wheat pastry flour for the fibre content, some Chia seeds for omega 3 fatty acids and protein, more of banana and less sugar. INGREDIENTS:

Now let's focus on the ingredients to make Pancakes.

DRY MIX:

?          Whole wheat pastry flour-1 and 1/2 cups 

?          Unsweetened cocoa powder-1/4 cup 

?          Chia seeds (optional)- 1 tablespoon 

?          Baking powder-1 and 1/2 teaspoon 

?          Baking soda- 3/4 teaspoon 

?          Teaspoon salt-1/4

WET MIX:

?         Mashed banana-1 cup 

?         Unsweetened almond milk-1 and 1/4 cups 

?         Avocado oil (any oil) -2 tablespoons 

?         Maple syrup-1 tablespoon 

?         Apple cider vinegar-1/2 tablespoon

?         Vanilla extract -1 teaspoon

           You can also use 2 tablespoons MINI semi-sweet chocolate chips as an option to garnish it afterwards.

PROCEDURE:

  1. Take a bowl stir the dry mix ingredients together, and keep it aside.
  2. Take a another bowl wet mix ingredients one by one and mix them well you can also use a electric mixer.
  3. Now pour the wet mix into the dry flour mix and combine the mixture together until the flour is all moistened and mixed well.
  4. Make sure lumps are not created (few lumps are ok) .Do not over mix it.
  5. After that leave the banana pancake batter for at least 5-10 minutes.
  6. Take a Pan and Heat it. Once it gets warm enough add about 1/3rd of a cup of the pancake batter to the pan. You will see air bubbles forming indicating that it is being cooked. Flip it over and cook it for another minute or so.
  7. Repeat the procedure for the rest of the batter.
  8. Serve it warm with maple syrup, coconut whipped cream or cut up fruits/nuts accordingly to your taste.

POINTS TO REMMEMBER

Whole wheat pastry flour might need more liquid than all-purpose flour. So if you plan to use all-purpose flour start with 1 cup of almond milk/any other liquid you are using and then add liquid in smaller increments if required.
